Process: beans fully washed, dried on raised bed.
Origin: Sidamo, a mountainous region of southern Ethiopia, is known for its unique varietal coffee which generally has mild acidity and subtle fruit notes. Our medium-dark roast retains the natural flavors of this coffee.
Single origin coffees should not be taken to the darker side of the roasting process as they lose their natural flavors and aromas. We believe roasting quality coffee too dark is a waste of value. That being said, we pushed ours as dark as possible without complete loss of the distinct flavors that we seek in our coffee.
